For the loin part,  the hint of its grilling method came from the Italian cuisine Galantine and the advice from the cook of Japan No. 1 Italian restaurant. 
Flexible and elastic texture, and well-grilled brisket is done!
For the brisket part,  it is cooked in low temperature to keep the soft texture of the meat.

Chicken-based soup is cooked well overnight with vegetable、kelp and chicken bone and then additional chicken meat is added and boiled again.
Finally, a clear chicken-based soup is done.
Soup looks clear but it has a rich and deep taste of chicken!

 
Noodles is made of whole flour. 
Rich in fiber.
Since noodles is thin and will easily expand as time goes by.
※Tip: Don't take so much time of photo taking! lol


★Eat like ramen expert in Japan!
It is called Aji-hen (味変), means taste-changing!

→Recommended seasoning: Kelp vinegar and black pepper!

What is the different to clear-layer- soup (特製鶏清湯らぁめん)?
No vegetable is added in the soup.
Only chicken bone is used!
Can you see the beautiful golden yellow color of the soup?
You can imagine how rich of the taste in the thick-layer-soup!

Just a sip of the soup, 
you can definitely feel the deep and delicious taste of the chicken. 


Different from clear-layer- soup (特製鶏清湯らぁめん),
thick noodles is used to be absorbed fully!

Way to order a ramen!
For the ones who are not familiar with the ordering method in Ramen shops in Japan!
Here you are for your reference.

 1.  Order with the ramen machine at the entrance.
(buying ticket)

 2. Insert money.

 3.  Press the button of the one you would like to order.
(Wow! This is very user-friendly! Understandable photo!)

4. Ticket and changes will come out at the bottom of the tray.
 

5. Take a seat and give the ticket to the staff. 

6.  Wait for a while! There you are! Your order is ready!
