One thing you can do that isn't allowed at other stores is touch the display knives.
When asked why,
they said a knife is an important tool when cooking,
so they want their customers to be able to touch and get a sense of the knife.

Various Kind of Knives
Classified According to the Application
Approximately 1,000 knives in the shop are made for different purposes.
We're no cooking expert nor do we know the difference between them all,
so we asked a few of the different knives that Tsubaya sells.
All-purpose Knife
Santoku & Gyuto Knives
The most common knife, the universal knife |
It is one of the most popular items in Tsubaya as the most basic kitchen knife of cooking, and this universal knife is divided into two kinds.
Japanese-style universal knife
"Santoku (δΈεΎ³)"
The blade is balanced at 5: 5, "Santoku" |
"Sanko universal knife" is the most widely used knife among all-round knife.
It means that it is suitable for any food such as meat, fish, and vegetables.
The blade is made in a ratio of 5: 5,
and it can be cut at any angle without difficulty.
Western-style universal knife
"Gyuto (ηε)"
"KyΕ«to Kotoku knife" is a kitchen knife widely used in western countries. It is mainly used for cutting meat.
It is narrower in section, longer in length than the Japanese-style universal knife Sankoku, and has a point where the cross section of the knife edge is shifted by a ratio of 7: 3 or 8: 2 to easily cut meat loaves and tendons.
Of course, besides meat, it can also be used for cutting vegetables and fish, and it is recommended for those who cut mainly meat.
Bread Knives
Tsubaya has various types of bread knives,
called bread knife, as well as knives for cooking materials.
Thanks to the cross section and the length of 30cm, it is possible to minimize the number of times to go back and forth without pushing the bread, so that the shape can be preserved without crushing.
In recent years, the development of home bakeries and other households are increasingly buying more people.
(It's good to cut meat loaves, sausage, etc.)
Petty Knife
Patty knife is a small knife about 130mm in length. It is mainly used for cutting fruit or making a piece of food for patisseries.
It is very difficult to find and it is very important for patricians, so many people are looking for a patty knife.

Funny and Creative Knives
In a restaurant full of long, short blades, there is not only a knife to cut food.
There was a whale, a blower made in the shape of a blowfish, I wanted to make it for real use, but I found that a Chinese guest ordered a turtle shape knife.
Knives Only for Eel
This knife is only for "Earing".
This knife, which looks like a hammer on the top of the blade, is intended to be used to put down the nail which fixes the eel.
Pin they stick into the eel's head |
Divided into Kanto and Kanto Districts

Naritasan Shinshoji, famous for eel |
The western area where commercial development has developed (Osaka, etc.) Means to open a ship and make a serious transaction.

Q & A for First-Time Visitors
Q. When I first go, what should I buy?
A. We recommend a universal knife, petty knife.
It is easy for beginners to use an all-purpose knife,
because it can cook a variety of ingredients.
If you have a budget of about 20,000 yen,
we recommend purchasing a universal knife and a petty knife together.
In addition, we recommend the "yanagiba" (ζ³ε),
which is great for cutting raw fish.
※What is "Yanagiba" (ζ³ε)?
The long blade allows the user to cut a block of flesh in a single stroke. This prevents zigzag cutting, which creates a serrated cross-section.
Q. The difference between wooden handle and plastic handle?
A. The difference between design and durability.
In the case of wooden handles, Japanese design is good and it is popular among Western customers. However, the wood is easily discolored, and most Japanese customers prefer plastic handles.
(All handles are replaceable.)
Q. How should I sharpen the knife?
A. Baron does not recommend much.
The rod type is close to first aid when you want to use it immediately,
and it is recommended to use stone type "Togiishi" (η γη³) for long time use.
Q. Is not it the same knife, just different in size?
A. Material and durability are different.
At first glance, they all look like the same knife,
but the ratios of the blade, the handle, the size,
and the quality of the knife are also different.
In the case of stainless steel,
the cutting force is less than that of iron,
but it does not rust well, and it is easy to manage.

Making it the only Knife in the World
"Lettering Service"
Our friend's name written in Chinese characters! |
but it can be nicked for free by a dedicated machine
This lettering service does not have to come back to the store because you can just pick it up right after you buy a knife.
(If the store is crowded, you may have to wait a bit.)
You can write a knife in any size,
you can also write your own words besides your name.
"Japanese cuisine" is one of the most popular dishes in the world,
which is made by craftsmen.
It is because of the fact that there are many Japanese dishes
such as fish dishes that are hard to come to this place.
Have you ever imagined that a knife made by a craftsman for a long time was vaguely expensive and hard to find?
"Tsubaya" in Kappabashi is available for about 10,000 yen,
and staffs who can speak English will kindly advise you,
so anyone can easily and easily buy a kitchen knife with craftsmanship!
